Color Me Green Cupcakes

St. Patrick's Day... Cupcakes! Of course. More shamrock power to go with the pin-on shamrocks I'll be giving my co-workers.


What You'll Need
White Cake mix - I used Betty Crocker Super Moist.
Green food coloring
Vanilla frosting
Green sprinkles or sugar (if you like)


What You'll Do
- Preheat the oven to 350° and line two cupcake/muffin pans with baking cups. One box will make 24 cupcakes. (I spray baking cups lightly with cooking spray. It helps the cupcakes come out of the baking cups, I've found.)

- Mix the cake mix per directions and ingredients on the box. Then add green food coloring until you get the shade you like. For this shade, I added about 10 drops. It does seem to stay almost true to color after baking, so you don't have to worry about a drastic color change.



Fill each baking cup 2/3 of the way full.


Bake about 20 minutes (follow instructions on cake box) or until a toothpick inserted comes out clean.


When the cupcakes have cooled completely, frost each cupcake.


For the cupcake flags, I printed a sheet of clovers and punched them out with a circle punch. Then, with a scalloped circle cutter, I punched a circle in green scrapbooking paper. I glued the clover to the green circle, and on the back, I used a thin line of glue to adhere a regular toothpick. Let that dry several hours. And there you have it.
