Favorite Things: Cast Iron Skillets

Don't ask me how you season them. Don't ask me how you clean them.

Just let me cook in them. Please?


My grandmother gave me these. She has quite a few of them - her mother's and my grandfather's mother's. I have two right now, but I can't wait to get my hands on some others.


They're a thing of a beauty. A right of passage.


And they bake - beautifully.



Iron Skillet Brownies
from Amanda's Cookin'

What You'll Need
3/4 cup butter (1 1/2 sticks)
3 ounces unsweetened chocolate (chopped)
1/2 cup sugar
1 cup light brown sugar, tightly packed
3 eggs
1 teaspoon vanilla
1/4 teaspoon salt
3/4 cup all-purpose flour

The Steps
1. Preheat your oven to 325° F. You want it to cook low and slow so the top doesn't burn and the inside is too gooey.

2. Melt the butter and chopped chocolate in your skillet on a low heat. (By low, I mean low. Don't turn it up. You don't want to burn the butter and chocolate - which is easy if you turn it too high.) Stir until well combined with a wooden spoon. (Never metal.)

3. Add sugar and light brown sugar and stir until well combined.

4. Add eggs one at a time, stirring until well combined.

5. Add vanilla and combine.

6. Add flour and salt and stir well. Run a rubber spatula around the edges, making sure all the batter is well combined.

7. Bake for 50 minutes. If your pan is larger than 8 inches (what I used), it may take less time. Mine took exactly 50 minutes.

I bake scones, biscuits, and pancakes in my iron pan. I actually like baking more than frying with 'em. Though I will brown steak in the pan on the stove and then put it in the oven to finish off. Now I'm gonna try your recipe soon. Thank you!

I love cast iron. I grew up cooking in/on my parent's well-cured cast-iron. It took me nearly fifteen years to find one that was well-cured and matched my Mom and Dad's.

I too love cast iron!!! I have so much and it's still not enough! I've been giving away alot of cast iron items and this week I'll be giving away a fabulous cast iron bread pan! These brownies look yummy by the way!
